Raw-unbaked hot cross buns

Serves: 15 small buns

You will need For the buns
450g oats
450g The Groovy Food Company organic coconut flour
510g ground almonds
1 tbsp cinnamon
1 tsp mixed spice
1 tsp ginger powder
1/2 tsp ground vanilla
400g dates
355ml water
2 tbsp maple syrup
100g raisins
100g cranberries     For the icing
20g The Groovy Food Company Coconut oil
100g coconut cream
20g raw honey
30g blueberries
125ml water

Directions

For the buns
In a blender, mix the oats, coconut flour, ground almonds and spices to produce a fine powder. Then mix in the dates till the mixture has broken down to give a fine crumby texture.

Next add the water and maple syrup and mix until a dough is formed. By hand add the raisins and cranberries to the dough until evenly distributed.

Form the buns and glaze the surface with a small amount of maple syrup.

For the icing
Mix all of the ingredients in a blender until a creamy mixture is formed.

Finally pipe on the cross or any other decoration.
