Gin spiced shortbread

Serves:

You will need

180g unsalted butter

88g golden caster sugar

180g plain flour

100g cornflour

1.5 tspb vanilla bean paste

6 tspb Old Curiosity Distillery Christmas gin

 

 



Directions

Cream the butter, sugar, vanilla and gin together until light and pale.

Sift in the flour and cornflour and mix until just combined.

Carefully roll out the dough to approx. 0.5cm and chill in the fridge for 30 mins.

Cook in oven at 180C for 15 mins and cool.
