Rosie Birkett's ultimate cheese toasties!

Take a look at Rosie Birkett's ultimate cheese toasties… harissa onion and cheese, and a chilli cheese toastie!

 

There are the seven wonders of the world… and then there's the cheese toastie. Whether you like it plain or spiced up, there's no doubting that bread smothered in cheese is utterly delicious.

For those who like their molten toasties a bit more fiery, Rosie Birkett is here to show you how to create two of her favourite chilli cheese toasties.

 

 

Chilli Cheese Toastie

Makes 2 toasties

 

Ingredients:

- 4 slices of white bread

- 50g butter, room temp

- 1 clove garlic, minced

- 1 tsp salt

- 1 tsp ground black pepper

- 1 tsp smoked paprika

- 1 tsp ground cumin

- 4 spring onions, finely chopped

- 1 red chilli, deseeded and finely chopped

- 1 green chilli, deseeded and finely chopped

- 4 slices Leerdammer

- Coriander, to garnish

 

Method: 

1. Mash the butter with the garlic, salt, spices and half of the spring onion and chillies. Spread one side of all the slices of bread with the spiced butter. Heat the grill to its highest setting and grill the bread, buttered side up, until crisp and golden.

2. Remove from the grill and butter the other side of all the slices, topping two of the just-buttered sides with the sliced Leerdammer. Scatter over the remaining spring onion and chilli, and sandwich with the grilled, crunchy side of the two other slices, so the just-buttered side is facing up.

3. Place the sandwiches under the grill, buttered-side up and grill for a few more mins, until the bread is crisp and golden, and the cheese inside is melted nicely.

 

 

Harissa and onion cheese toastie

Makes 1 toastie

 

Ingredients:

- 2 tbsp olive oil

- 1 red onion, finely sliced

- 1 white onion, finely sliced

- 1 tbsp harissa (I like rose harissa)

- 1 tbsp mayo

- 1 clove garlic, minced

- 2 slices of sourdough

- 4 slices Leerdammer

- Knob of butter

- 1 tbsp rapeseed oil

 

Method:

1. Heat the olive oil over a medium heat. Add both the onions, season well, and cook down for 20-30 mins, until sweet, soft and caramelised. Stir through the harissa paste.

2. Mix the garlic into the mayo and spread both sides of each slice of bread with the mayo. Top one half with half the onions, followed by 3 slices of the cheese. Top with more onions, and another slice of cheese, then top with the other half of bread.

3. Heat a skillet over a medium-to high heat and melt a knob of butter and tbsp rapeseed oil. Carefully place the sandwich into the skillet and cook for 3-5 minutes, turning halfway through, until the bread is golden and crisp and the cheese is melting.
