5 Pancake recipes you have to try this pancake day

Get your whisks out and don the aprons, because Shrove Tuesday (A.K.A Pancake Day) is this Tuesday, 13th February 2018!

We've rounded up the most mouth-watering pancake recipes for you to try out that are all super-easy and super-tasty!

1) Fluffy Apple Pancakes

Ingredients:

- 170g all-purpose flour

- 90g sugar (divided)

- 1 tsp baking powder

- 1/2 lime (juice)

- 75g walnuts

- 2 eggs

- 180ml milk

- 1/2 apple

- 1 tbsp vanilla extract

- Pinch of Salt

- Butter for frying

- Dried fruit for serving

- Maple syrup for serving

Method:

1. Whisk together the flour, 40g of the sugar, a pinch of salt and baking powder

2. Heat the lime juice and remaining sugar in a frying pan over a medium-low heat, stirring often. Once the sugar has melted, add the walnuts and continue to cook until the nuts are caramelised, approx. 3 – 4 min. Remove from heat

3. Separate the eggs and add the egg whites to a grease-free standing mixer. Set the yolks aside. Beat the egg whites on high until soft peaks form.

4. In a large bowl, whisk together the milk and egg yolks.

5. Sift in the flour mixture and mix well, making sure there are no lumps

6. Fold the egg whites into the batter.

7. Grate the apple, using the Microplane Master Series Coarse Grater, into the batter and add vanilla extract. Stir to combine.

8. Heat some butter in a frying pan over medium heat. Spoon batter into frying pan and cook until golden brown (approx. 2 – 3 min. per side). Transfer to a plate to serve.

9. To serve, top with caramelized walnuts and dried fruit drizzled with maple syrup

2. Gluten Free Pancakes

(makes 7 pancakes)

Ingredients:

- 100g Schär Mix It! Universal

- 1 pinch of salt

- 2 medium eggs

- 200ml semi-skimmed milk

- 50ml water

- 2 tsp of vegetable oil for frying

- Caster sugar and lemon juice to serve

Method:

1. Combine the Schär Mix It! Universal and salt in a bowl.

2. Beat in the eggs and half the milk until well combined. Gradually whisk in the remaining milk and water and then leave to stand for 10 minutes.

3. Lightly coat the base of a 20-23cm frying pan with oil and place over a moderate heat.

4. When the pan is hot, pour in enough batter to thinly cover the base. Cook over the heat until the pancake is set and moves freely in the pan. Flip the pancake and cook on the reverse side until golden. Repeat with the remaining mixture.

5. Serve with a sprinkle of caster sugar and a good squeeze of lemon juice.

3. Healthy Banana Pancakes

(Makes 12 pancakes)

Ingredients:

- 1 ripe Banana
- 1 Egg
- 1/2 cup (85g) All Purpose Flour
- 1/2 cup (75g) Wholemeal Flour
- 1 cup (235ml) Milk
- 2 teaspoons baking powder
- Pinch of salt
- 1/2 teaspoon Vanilla extract

Method:

1. Sift the flours, baking powder and salt into a large bowl so that they are evenly combined.

2. Blend the banana, egg, milk and vanilla extract in a blender until completely smooth. Pour the mixture into the flour and whisk until smooth with no remaining lumps.

3. Heat some coconut oil (or butter if you prefer) in a large frying pan on a medium heat. Use a 1/4 cup to spoon the mixture into the pan. Cook each pancake for 2 minutes on each side, or until golden brown.

4. Serve with berries, maple syrup or any other pancake toppings you love!

4. Fluffy American Pancakes

(serves 4)

Ingredients:

- 125 g plain flour

- 1 tsp baking powder

- 3 eggs

- 150 ml full-fat milk

- 1/2 tsp lemon juice

- 1/4 tsp ground cinnamon

- a pinch salt

- 2 tbsp vegetable oil

- Walnuts, bananas and honey to serve.

Method:

1. In a large bowl, sift the flour and add the baking powder and cinnamon.

2. Separate the egg yolks from the egg whites.

3. Beat the egg yolks lights, pour over the milk and give a good stir.

4. Combine the flour mixture with the milk and egg yolk and mix well with a silicone spatula, you will get a thick batter.

5. Next, beat the egg whites with a pinch of salt until it forms stiff peaks.

6. Fold it in the batter, add the lemon juice and mix well to combine.

7. Heat up a non-stick frying pan, add one or two drops of oil and use a ladle to pour over some batter.

8. Cook on both sides until golden and firm to touch, it should not take longer than 1-2 minutes once the pan is hot.

9. Repeat with the remaining batter.

10. Serve with honey, slices of banana and chopped walnuts.

5. Apple and Cinnamon Pancakes

(Makes 12 pancakes)

Ingredients:

- 300g self-raising flour
- 1 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 2 medium Waitrose British Blacktail Free Range Eggs
- 500g Onken Natural Yogurt 
- 85g essential Waitrose 
- salted dairy butter, melted
- 2 British apples, peeled, cored and grated
- 75g sultanas
- 1-2 tbsp sunflower oil
- 1-2 tbsp clear honey

Method:

1. Mix the flour, bicarbonate of soda, cinnamon and a pinch of salt in a bowl. Make a well in the centre, then gradually beat in the eggs, followed by 300g of the yogurt and the melted butter. Stir in the grated apples and sultanas.

2. Brush a heavy-based frying pan with a little oil and drop large spoonfuls into the pan to make 6–7cm pancakes. Cook for 1-2 minutes each side until golden and cooked through. (There should be enough batter to make 12 pancakes; cover and keep warm while you cook them all.)

3. Stack 3 pancakes on each plate and top each with a spoonful of yogurt and a drizzle of honey.
